I have the extreme privilege of partnering with Eggland's Best as one of their digital ambassadors in helping to spread awareness of their support of The Susan G. Komen for the Cure.
As well as displaying Komen for the Cure’s running ribbon logo (along with a pink version of the “EB” stamp) on select egg varieties through November 15th, Eggland’s Best will donate $50,000 to support Susan G. Komen for the Cure in its promise to save lives and end breast cancer forever.
Eggland’s Best has also partnered with Claire Robinson from Food Network’s 5 Ingredient Fix to help spread the word about EB’s Breast Cancer Awareness efforts.
Ms. Robinson has created three dishes that are simple (Yay!) delicious (YAy!) and more importantly, healthy meal ideas (YAY!) that families (like mine) can enjoy on a chilly day, or night.
The recipes include: Scrambled Eggs over Roasted Tomatoes, Zucchini and Goat Cheese Frittata and Baked Egg Casserole.

Scrambled Eggs Over Roasted Tomatoes would look so pretty served at your holiday table for breakfast, lunch and, heck, a loaf of crusty bread, alongside a bottle of wine, I'd eat it for dinner, too! [serves 4]

Zucchini and Goat Cheese Fritata would make a terrific vegetarian dish, or perfect meal for a last minute, impromptu brunch at your house (ahem) just sayin'! [serves 6]

Baked Egg Casserole serves 4 and can be ready in under an hour...seriously...what's not to love, right?
