Golden Wheat Irish Soda Bread
Prep Time: 15 min. | Total Time: 1 hour 15 min. | Makes: 16 servings.
What You Need
2 cups all-purpose flour
1-1/4 cups whole wheat flour
1/3 cup sugar
1-1/2 tsp. CALUMET Baking Powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup cold butter, cut into 1/2-inch cubes
3/4 cup milk
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 cup raisins
1 Tbsp. caraway seeds
Make It
- Heat oven to 350°F.
- Mix first 6 ingredients in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
- Whisk milk and sour cream until well blended. Add to flour mixture with raisins and seeds; stir just until moistened.
- Knead dough on floured surface 10 times; shape into 2-1/2-inch-thick round. Place on baking sheet sprayed with cooking spray; cut deep "X" in top of dough.
- Bake 1 hour or until golden brown; cool 5 min. on baking sheet. Transfer to wire rack; cool completely. Cut into wedges.
Size-Wise: Enjoy your favorite foods on occasion but remember to keep tabs on portions.
Shortcut: Instead of measuring the sour cream, measure milk in 2-cup liquid measure. Add enough sour cream until mixture measures 1-1/2 cups; whisk until well blended. Add to flour mixture with raisins and seeds; continue as directed.
Storage Know-How: Store leftover bread in resealable plastic bag for up to 24 hours. Or, for longer storage, wrap tightly and freeze up to 2 months. Thaw at room temperature before serving.
Special Extra: After making the 'X" in top of dough, sprinkle with 1 Tbsp.sugar. Bake as directed.
