In celebration of Oscar Mayer's Bacon Creation Week (hey, it's bacon, why not?) I was challenged to re-create our favorite family recipe, using bacon and, personally, it didn't take me long to decide on EXACTLY which one to share with you!
Bacon-wrapped Tenderloin of Beefy Goodness a la Garth (NHRN)
Considering, this meal is totally:
- One of my husband Garth's (not his real name) specialties
- Elegant enough to serve for any special occasion
- Yet easy enough to put together, just because
- Or, whenever beef tenderloin goes on sale at our supermarket.
Also, "beefy" (as my kids used to call it when they were little-er) is the one food they will ALL actually eat, you know, on purpose.
Not to mention, we also get to share a one year supply of Oscar Mayer Bacon along with a $125.00 AMEX gift card with one (1) of our online friends, too!
How cool is that, right? Want some?
Step 1: Trim yucky stuff (translation: silver skin, excess fat, yuck!) from off of your beef tenderloin (DAGNABIT!) and cut into 1/2 pound to 3/4 pound steaks (I think!) or, about the width of your thumb, from tip to knuckle (this is where all this visual aid stuff helps, right?!?)
Step 2: Aaaanyway, wrap each piece of tenderloin, tenderly (heh!) in bacon, secure with toothpicks and then season each side, with salt and pepper, to taste.
Step 3: Place in your favorite non-stick skillet (make sure it's HOT!) cook on top of stove (yep, no oven required) about 3-4 minutes on each side and make sure you touch them for preferred doneness. Garth (NHRN) says:
Squishy = raw
Soft = rare
Somewhat firm (soft, but pushes back) = medium rare
If you cook it anymore: you shouldn't be allowed to eat tenderloin
Honestly, it tastes GREAT, every gosh-darned time and, seriously, the man knows his beefy.
