Did you know that September is National Breakfast Month? Okay, I know, I know, seems like most days of the year are proclaimed as "food holidays" and would you believe that it happens to be National Chicken Month too?
AWESOME!!! Considering we ARE big on breakfast for dinner (or brinner) I thought it would be fun to share with you our easy-peasy family recipe for homemade chicken fingers, with a breakfast twist.
We were out of bread crumbs (note to self: remember to actually bring the shopping list, to the store, with you!) so I grabbed our brandy new food chopper (or, chop-puh if you're from Jersey) gifted to me by my good friend Melisa (a.k.a. Suburban Scrawl, you should be reading her) and coated the chicken fingers with Rice Krispies cereal.

WHAT YOU WILL NEED:
- 2 cups Kellogg's Rice Krispies (crushed to approx. 1 cup)
- 2 cups all-purpose flour (seasoned with 1/4 tsp. salt)
- 2 eggs
- 1/2 tsp. garlic powder (or substitute with your favorite seasoning)
- 2 cups vegetable oil
- 1 pound boneless, skinless chicken breast cut into tenders (or just purchase pre-cut tenders, it's a little more expensive this way, it saves a little bit of time)
PUTTING IT ALL TOGETHER:
1. Heat oil in an electric skillet, deep fryer or shallow pot to 350 degrees.
2. Dip chicken pieces into flour, then egg and coat with Rice Krispies mixture.
3. Fry 3 or 4 pieces, at a time, for about 2-3 minutes on either side or until golden brown and chicken is no longer pink.
4. Carefully remove from oil and drain on dish lined with paper towels. Sprinkle with salt.
Serve with your favorite side dish and dipping sauces or, if you're eating over at our house, just leave the bottle of ketchup on the table.
Not into deep-frying? Not a problem. You can adjust recipe slightly for oven-baked chicken fingers:
- Preheat oven to 350 degrees. Coat baking sheet with vegetable spray.
- Place 1/4 cup vegetable oil in shallow bowl.
- Dip chicken pieces in vegetable oil and then coat with crushed/seasoned Rice Krispies on both sides.
- Place chicken on baking sheet, give each a piece a quick shot with vegetable spray and bake at 350 degrees for about 15 minutes or until chicken is no longer pink.
- Sprinkle with salt (or parmesan cheese) and enjoy :)
